White Chocolate Cherry

Dried cherries, cashews, white chocolate, coconut flakes and multi-grain cheerios come together to make these chewy bars that are held together with honey and egg whites.
Ingredients
  • butter or vegetable oil, for greasing the pan
  • flour, for dusting pan
  • 2 cups Cheerios multi-grain cereal, coarsely chopped
  • 3/4 cup cashews, coarsely chopped
  • 2/3 cup dried cherries, coarsely chopped
  • 1/2 cup organic coconut flakes
  • 2/3 cup white chocolate chips
  • 2 tablespoons whole wheat flour
  • 1/3 cup honey or brown rice syrup
  • 2 large egg whites, room temperature
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
Instructions
  1. Heat oven to 300°F. Line an 8x8 baking pan with parchment or foil, grease and flour.
  2. In a large bowl mix cereal, cashews, cherries, coconut, chocolate chips and flour.
  3. In a separate bowl whisk together honey, egg whites, salt and vanilla. Pour over cereal mixture and combine well.
  4. Add to the baking pan and pat down evenly and well using your hands.
  5. Bake about 45 minutes until bars are dry on top and light golden around the edges. Cool completely, lift out of pan and slice with a serrated knife into bars or squares.
