Guacamole Taco Burgers

 

Ingredients
1 pound ground beef (I like sirloin)
1/4 cup onion, finely diced
1 + 1/2 teaspoons chile powder
1 teaspoon dried oregano, crushed between fingertips
1/2 teaspoon cumin
sea or kosher salt and fresh black pepper
4 slices sharp cheddar or monterey jack cheese
Guacamole:
2 avocados
1 tablespoon fresh lemon juice
1/4 cup mayonnaise or sour cream
1/4 cup tomatoes, diced
1 tablespoon fresh cilantro or parsley, chopped
4 hamburger buns or cornbread focaccia
Toppings:
tomato slices
shredded lettuce
tortilla chips
 
Instructions
  1. In a large bowl using a fork combine the ground beef, onion, chile powder, oregano and cumin together. Form into 4 equal-sized patties. Season each side with salt and pepper. Cook them however you like to cook your burgers - I use a George grill. During the last minute or two melt the cheese over top.
  2. While the burgers are cooking mash the avocado and mix with the lemon, mayo, tomatoes and cilantro. Season to taste with salt and pepper.
  3. Serve the burgers on buns with generous dollops of quacamole and any toppings you like.
