Yellow Cake & Chocolate Buttercream


I love love love cake. Something about it is so comforting, satisfying, and just makes me feel like the world is okay. But then I eat the whole thing and well, still feel good! My DH and I used to be addicted to boxed yellow cake and a tub of chocolate frosting. It was our go-to dessert when we were craving sweet. Plus, box cakes are such an easy recipe to make. We would go to the store and buy 4 items, yellow boxed cake, chocolate frosting, milk, and vanilla ice cream. Milk for my DH to drink and ice cream for me to eat with my cake.
Then one day I got to thinking, “I make all these other cakes from scratch and they taste so much better than a box mix, why not make a yellow cake from scratch with a chocolate buttercream?” It was a ‘Duh’ moment for sure. To illustrate how good this cake & buttercream frosting, the delicious rating will include photos.

Serves: 8 healthy slices
Bake in a 9×13 if you prefer. Serve with a cold glass of milk or vanilla ice cream.
Ingredients
  • Cake: 2 sticks of butter, softened
  • 1 1/2 cups white sugar
  • 4 Eggs
  • 3/4 cup milk
  • 1 1/2 tsp vanilla extract
  • 2 cups flour
  • 2 tbsp corn starch
  • 2 tsp baking powder
  • 1/2 tsp salt
  • Chocolate Buttercream: 2 sticks of butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 4 tbsp of milk
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Greas and flour 2 round cake pans.
  3. Add flour, cornstarch, baking powder, and salt together in one bowl.
  4. In a large bowl, cream butter and sugar together until fluffy.
  5. Mix in eggs well one at a time.
  6. Add in vanilla.
  7. Mix in 1/3 of the flour mixture.
  8. Mix in half the milk.
  9. Mix in an additional 1/3 of the flour mixture.
  10. Mix in the remaining milk.
  11. Mix in remaining flour mixture just until combined.
  12. Pour evenly into cake pans and bake for 27-30 minutes.
  13. Cool for 10 minutes in pan before inverting them on a rack.
  14. Prepare frosting by creaming butter.
  15. Sift powdered sugar and cocoa powder together and add to butter little by little until combined.
  16. Mix in vanilla, salt, and milk and beat creamy for about 4 minutes.
  17. Add more sugar or milk depending on the consistency.
  18. Frost one cake layer, add second on top, frost whole cake.
